Birfday Cake!!
Hey Dylan! This one’s for you! (and all the other birthday pups!) I made this for Jack a few weeks ago for his first birthday!
Peanut Butter Carrot Cake!!
o1 cup flour
o1 tsp baking soda
o1/4 cup peanut butter
o1/4 cup vegetable oil
o1 cup shredded carrots
o1 tsp. vanilla
o1/3 cup honey
o1 egg
Mix flour and baking soda. Add remaining ingredients. Pour into greased 8″ round cake pan and bake at 350° for 30 minutes. Let cool. Puree cottage cheese in blender for icing. Decorate with more peanut butter and carrots.
Jack doesn’t do too well with some stuff (like cottage cheese). I also wanted the cake to last a few days, so I made a different icing. Mix 1/2 cup of peanut butter, about 2 tablespoons of honey and a tsp of vanilla. Spread on the top and sprinkle with chopped carrots!
My boys went crazy over this stuff!!!
